Seafood Selections

!!++ Sexy Salmon This healthy dish will please everyone! Delicious salmon steaks stuffed with our own crab meat stuffing.

**  Creole Shrimp Stew A Cajun classic, but it's not hot. Tender tiger shrimp prepared with tomatoes, onions and bell peppers.

           Shrimp Vermicelli This dish is made with vermicelli pasta tossed with tender shrimp and whole garlic and topped with toasted Parmesan cheese.

++ SBD Srimp & Eggplant This recipe is pretty simple. Sautéed shrimp and chunks of eggplant seasoned with pepper and garlic. This is really good over rice.

++ SBD Fish with Moroccan Cumin Paste  This dish is HOT! The main ingredients are cumin, cilantro and cayenne pepper! Best served over rice. Try tilapia or flounder. And black beans make a fine side addition.

!!++ Szechuan Dry-Braised Prawns This is a fabulous dish—regardless of how you like Asian foods! We use jumbo shrimp in this recipe and they are dry-braised in an egg wash to seal in the juices and tenderness of the shrimp. Then they are simmered briefly in a Szechuan & ginger sauce. Fabulous!

!! Roasted Salmon & Curried Spinach  This is truly elegant—great for a dinner party.  Fillet of salmon is roasted in a very hot oven with fresh spinach in a very light curry sauce.  (This dish is ideal with Sea Bass, when it's available.)

SBD Spinach & Pesto Stuffed Salmon  The bold taste of pesto works well with salmon.  This dish is just as good with the salmon served on a bed of spinach as it is stuffed with it.

SBD Grouper Puttanesca  Fillet of grouper topped with tomatoes stewed in olive oil, olives, capers and herbs.

SBD Scampi Scampi is the Italian word for the tail portion of a shrimp. But us Americans think it means shrimp broiled in butter. This version is made with basil, diced red bell peppers and wine.

!!SBD Rosemary Broiled Salmon  Lightly seasoned with olive oil, shredded garlic, rosemary and dry white wine.  The very best way  to broil a piece of salmon  (Superb with Rainbow Trout, when available)

++SBD Tilapia Verde A Japanese-style dish of tilapia, wrapped in green lettuce leaves with shiitake mushrooms and steamed over leeks, broccoli, snow peas and carrots. Great served with white rice.

++SBD Nut & Veggie Halibut This recipe is from the new South Beach Diet cookbook, with a few additions. Fillet of snapper stuffed with pine nuts, toasted almonds and a mirepoix of aromatic veggies.

++SBD Pecan-Crusted Flounder This can be prepared with almost any fish, really. But perhaps the best is flounder or other flatfishes best. The pecans get nice and toasty as this fish is pan fried in just a little oil.

         Baked Catfish Parmesan Catfish fillets coated with a mixture of panko breadcrumbs and Parmesan cheese then baked with very little oil and topped with toasted sliced almonds.

New! Swordfish with Horseradish-Almond Crust & Mango Sauce Deliciously mild sword paired with a sweet, tangy, spicy mango relish.

New! Southwestern Halibut Fillet of Halibut in a spicy preparation of spices, garlic, red bell peppers and white wine reduction. Incidentally, this dish is equally fantastic with shrimp—ask for “Southwestern Scampi.”

Soups

** Shrimp & Okra Gumbo Gumbo is a Cajun classic. There are as many gumbos as there are people in Louisiana. This one is made with shrimp, okra and tomatoes. Gumbo is a soup.

         Chicken and Sausage Gumbo  The most popular gumbo, this one is made with chicken pieces and andouille sausage. It's thick and dark brown, almost like a gravy. And it's good! When Cajuns think of comfort food, this is what they make.

         Mexican Black Bean Soup with Sausage This is a very hearty, very spicy soup of black beans and smoked pork sausage. Seasoned with cumin, cilantro and lime juice.

Moong Dahl This is an Indian word that just means lentil soup. Those familiar with Indian cuisine should be familiar with this popular dish. It’s a thin, yellow soup that tastes a lot of turmeric and can be spicy or mild.

Tortilla Soup A Tex-Mex classic, this soup consists of bits of white or dark chicken, tomatoes, chipotle peppers and strips of corn tortilla. Chicken soup for the Mexican soul in you!

Vegetarian Dishes

Baked Barley with Shiitake Mushrooms & Caramelized Onions  This is our classic  vegetarian dish!  It has a great meaty taste and the barley is very satisfying.

Eggplant Parmigiana This classic needs no introduction! Big hearty rings of eggplant coated and fried and topped with cheese. Served with a robust tomato sauce. A  lighter version of this dish is done by baking the eggplant instead of deep frying.

Four Grain Casserole This is a tomatoey dish of millet, barley, buckwheat groats and short-grain brown rice. A good boost of protein can be gotten by adding some tofu.

Quiche There are as many different versions of quiche as there are cooks. Our favorites are  Brock-Chee, Lorraine, Grecian (Feta!), Tomato.

Vegetarian Stuffed Peppers Red peppers halved and stuffed with a mixture of short-grain brown rice and mushrooms and spiced with chili powder.

!! Spinach Lasagna  Try this vegetarian version - some think it's better than the meat one.

Indian-Spiced Cauliflower & Potatoes with Whole Cumin Seed This is a very strongly flavored dish and can be hot depending on how much chilies used. The ruling flavor is cumin. This is dish very satisfying and can be tasted on every square inch of your tongue. Firm tofu sautéed in with it will give it the protein it needs to become a main dish.

Lentils with Spinach and Ginger This very nourishing Indian dish consists of yellow lentils cooked into a kind of thick soup stirred in with spinach. It’s a little spicy but pleasantly seasoned.

Dry Moong Dahl This is the same as the above only the dish is more the consistency of a bowl of cooked barley.

Thai Green-Curry Tofu Firm tofu, cubed and fried and simmered in a spicy coconut sauce.

Thai Curried Noodles with Peppers & Tofu This dish has a nice rounded flavor typical of Thai dishes, a little sweet and a little heat. Yellow curry.

Chinese Fried Noodles with Spinach This is a great dish. Lots of shiitake mushrooms, bean sprouts and spinach stir-fried with egg and aromatic veggies. Served with lo mein or rice noodles.
