Tomato Pie

Ingredients:
4 med Tomatoes - sliced
1/2 cup green onion or Vidalia chopped
12 fresh basil leaves,  Salt and Pepper 
1  prebaked deep dish pie shell 9"  ( 1 for top if desired )
2 cups total of grated cheese ( cheddar and mozzarella ) 
1 cup mayonnaise
 
Cook pie crust as directed ( poke holes in bottom ) and allow to cool

Preheat oven to 350, Drain ( 15 minutes ) peeled tomatoes w/ colander in the sink.
Layer the onion, tomato slices, and basil in pie shell. Then salt and pepper.  Mix cheeses and mayonnaise together and pour over sliced tomatoes.  Bake for 30 minutes or until lightly browned ( 35 with crust on top )..
